Description

Learn how to make delicious Crunchy Salt and Pepper Shrimp at home with this easy recipe. Perfectly seasoned and crispy, these shrimp are a must-try!


Ingredients

  • 454 g frozen shrimp, peeled and deveined, tails left on
  • 128 g cornstarch
  • 720 ml vegetable oil
  • 6 cloves garlic, chopped
  • 2 tablespoons (30 ml) fresh ginger, sliced
  • 2 teaspoons (10 ml) red pepper flakes
  • 2 teaspoons (10 ml) salt
  • 3 teaspoons (15 ml) black pepper
  • 60 ml scallions, sliced
  • white rice, cooked, for serving


Instructions

  1. Place a wire rack on top of a baking sheet.
  2. Fill a medium bowl with cold water and immerse the shrimp, waiting around 10 minutes for them to defrost.
  3. Once thawed, lay the shrimp on paper towels and press gently to remove excess moisture.
  4. In a large bowl, pour in the cornstarch and toss the shrimp until they are fully covered.
  5. Heat the vegetable oil in a wok or a large pan until it reaches a temperature of 400°F (200°C).
  6. Introduce the chopped garlic to the oil, cooking for 40 seconds to 1 minute until it turns a golden hue, then remove with a strainer or slotted spoon and drain on paper towels.
  7. Cook the shrimp in batches of about six for 2 minutes or until they achieve a light golden color, then place them on the wire rack to drain.
  8. In a cleaned wok or large pan, gently toast the ginger slices and red pepper flakes for 2 minutes until the ginger begins to brown.
  9. Combine the shrimp with the ginger and pepper flakes, tossing them together. Sprinkle with salt and pepper, ensuring they are evenly coated.
  10. Move the shrimp to a serving plate and adorn with sliced scallions and the previously fried garlic.
  11. Serve alongside cooked white rice.
