Description

A fun and flavor-packed sushi recipe perfect for a night in with friends, featuring creamy avocado, crunchy cucumbers, and savory seafood.


Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 4 sheets nori (seaweed)
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1 cup imitation crab meat or shrimp
  • 1/2 cup tempura flakes
  • Soy sauce (for serving)
  • Pickled ginger (for serving)
  • Wasabi (for serving)


Instructions

  1. Rinse 2 cups of sushi rice under cold water until the water runs clear, then combine with 2 1/2 cups of water and cook according to instructions.
  2. Prepare additional ingredients: slice the avocado and julienne the cucumber.
  3. Once rice is cooked and slightly cooled, mix rice vinegar, sugar, and salt until dissolved, then stir into the rice.
  4. Lay a sheet of nori on a bamboo mat, wet your hands, and spread a handful of rice over the nori, leaving an inch at the top.
  5. In the center, layer avocado, cucumber, and crab or shrimp, then roll the sushi tightly using the bamboo mat.
  6. Press tempura flakes onto the rolling seam and slice the roll into bite-sized pieces with a sharp knife.
  7. Serve with soy sauce, pickled ginger, and wasabi.
