A fun and flavor-packed sushi recipe perfect for a night in with friends, featuring creamy avocado, crunchy cucumbers, and savory seafood.
Ingredients
- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 4 sheets nori (seaweed)
- 1 avocado, sliced
- 1 cucumber, julienned
- 1 cup imitation crab meat or shrimp
- 1/2 cup tempura flakes
- Soy sauce (for serving)
- Pickled ginger (for serving)
- Wasabi (for serving)
Instructions
- Rinse 2 cups of sushi rice under cold water until the water runs clear, then combine with 2 1/2 cups of water and cook according to instructions.
- Prepare additional ingredients: slice the avocado and julienne the cucumber.
- Once rice is cooked and slightly cooled, mix rice vinegar, sugar, and salt until dissolved, then stir into the rice.
- Lay a sheet of nori on a bamboo mat, wet your hands, and spread a handful of rice over the nori, leaving an inch at the top.
- In the center, layer avocado, cucumber, and crab or shrimp, then roll the sushi tightly using the bamboo mat.
- Press tempura flakes onto the rolling seam and slice the roll into bite-sized pieces with a sharp knife.
- Serve with soy sauce, pickled ginger, and wasabi.
