Delicious crispy shrimp tacos bursting with flavor and texture, perfect for a taste of the coast.
Ingredients
- 1 lb shrimp, tails and shells removed
- 2 bell peppers, thinly sliced
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 2 tbsp taco seasoning
- 8-10 corn tortillas
- 1 cup shredded cheese (Monterey Jack or cheddar mix)
- 1 tbsp olive oil
- Guacamole, sour cream, and salsa for serving
Instructions
- Preheat your oven to 425°F.
- In a large pan, sauté the onion and bell peppers with olive oil over medium heat for about 10 minutes until caramelized.
- Add minced garlic, taco seasoning, and a pinch of salt to the pan, cooking for an additional minute.
- Toss in the shrimp and cook for about 5 minutes until pink and opaque.
- Warm the tortillas in the microwave for about 30 seconds until pliable.
- Lightly brush the outside of each tortilla with olive oil.
- Fill each tortilla with approximately 4 shrimp and some onion and pepper filling, adding cheese as desired.
- Place the tacos on a baking sheet, cover with a smaller baking sheet to press them, and bake for 10 minutes.
- Remove the smaller baking sheet and bake for an additional 10 minutes until the tortillas are crispy.
Notes
For added flavor, consider squeezing lime juice over your tacos and experimenting with toppings like fresh cilantro or diced tomatoes.
