Ingredients
- 1/4 (8 oz (227 g)) block cheddar cheese
- 1/2 small bunch cilantro
- 1/4 (8 oz (227 g)) block cream cheese
- 2 cloves garlic
- 1 jalapeño pepper
- 2 large flour tortillas
- 1/8 cup (30 ml) plain Greek yogurt
- 3/4 lb (340 g) raw peeled shrimp, fresh or frozen
- 1 red bell pepper
- 2 tomatoes
- 1/2 medium yellow onion
- 1/8 tsp (1 ml) black pepper
- 1/2 tsp (3 ml) chili powder
- 1/4 tsp (1 ml) cumin, ground
- 4 tsp (20 ml) extra virgin olive oil
- 1/4 tsp (1 ml) paprika
- 1/4 tsp (1 ml) salt
Instructions
- Clean and dry the fresh vegetables.
- If your shrimp is frozen, place them in a strainer and rinse with cold water to thaw them slightly and remove ice. (Skip this if using fresh shrimp.) Dry the shrimp using a clean cloth or paper towels.
- Remove seeds and slice the bell pepper into thin pieces; place them in a bowl.
- Cut the jalapeño pepper into quarters lengthwise, remove seeds and inner ribs with a spoon. Chop finely and add to the bowl with the bell pepper. (Be cautious with jalapeños; avoid eye contact, wash hands thoroughly after handling, or wear gloves.)
- Mince the garlic cloves; peel, halve, and dice the onion finely. Add both to the bowl.
- Heat a pan over medium temperature.
- When the pan is ready, pour in oil and swirl to cover the base. Add bell pepper, jalapeño, garlic, and onion; stir occasionally and cook until the vegetables are soft, about 4-5 minutes. (Keep the bowl for the next step.)
- Grate cheddar cheese coarsely; cut cream cheese into small chunks. Put cheeses in the saved bowl and set aside.
- Remove cilantro leaves from stems; discard stems and chop the leaves finely.
- Add shrimp, half of the cilantro (save the rest for garnish), and spices to the pan; cook until shrimp turn opaque, 1-2 minutes on each side.
- Lower the heat and add the cheeses. Stir occasionally until the cheeses are melted and mixed, about 2-3 minutes more. Remove from heat.
- Lay tortillas on a flat surface and place the shrimp mixture down the center of each. Fold the sides in and roll tightly to finish.
- Use paper towels to clean the pan and return it to medium-high heat.
- Once the pan is hot, add more oil and swirl to cover the base. Place burritos with the seam side down and cook, turning every 2-3 minutes, until they are golden brown and crispy on all sides. Remove from heat.
- While cooking, dice tomatoes into medium-sized pieces.
- To serve, slice burritos in half and place them on plates. Top with tomatoes, the remaining cilantro, and yogurt. Enjoy!
