Ingredients
- Shrimp, peeled and deveined, 1 pound (454 g) (450 grams)
- Crab meat, 1 cup (240 ml) (150 grams)
- Cream cheese, softened, 8 ounce (227 g) s (225 grams)
- Green onions, finely chopped, 2
- Garlic, minced, 4 cloves
- Soy sauce, 2 tablespoon (30 ml) s (30 milliliters)
- Sesame oil, 1 tablespoon (15 ml) (15 milliliters)
- Spring roll wrappers, 20 sheets
- Vegetable oil, for frying
- Salt, 1/2 teaspoon (3 ml) (2.5 grams)
- Black pepper, 1/4 teaspoon (1 ml) (1 gram)
- For the garlic dip:
- Mayonnaise, 1/2 cup (120 ml) (120 milliliters)
- Garlic, minced, 2 cloves
- Lemon juice, 1 tablespoon (15 ml) (15 milliliters)
- Soy sauce, 1 teaspoon (5 ml) (5 milliliters)
- Sugar, 1 teaspoon (5 ml) (5 grams)
- Salt, 1/4 teaspoon (1 ml) (1 gram)
- Black pepper, a pinch
Instructions
- Chop the shrimp into small pieces and place them in a large mixing bowl.
- Add the crab meat and softened cream cheese to the bowl with the shrimp.
- Mix in the finely chopped green onions and minced garlic (4 cloves).
- Add soy sauce (2 tablespoons), sesame oil, salt, and black pepper to the mixture.
- Stir the mixture until all ingredients are well combined.
- Lay a spring roll wrapper on a clean surface with a corner facing you.
- Spoon about 1 tablespoon of the filling onto the wrapper near the corner closest to you.
- Fold the corner over the filling, then fold in the sides.
- Roll the wrapper tightly around the filling, sealing the edge with water.
- Repeat with remaining wrappers and filling.
- Heat vegetable oil in a deep pan over medium-high heat.
- Fry the spring rolls in batches until golden brown and crispy, about 3-5 minutes.
- Transfer fried spring rolls to a paper towel-lined plate to drain excess oil.
- For the garlic dip, combine mayonnaise and minced garlic (2 cloves) in a small bowl.
- Add lemon juice, soy sauce (1 teaspoon), sugar, salt, and black pepper to the mayonnaise.
- Stir the dip ingredients until well mixed.
- Serve the crispy spring rolls hot with the garlic dip on the side.
