Ingredients

  • Shrimp, peeled and deveined, 1 pound (454 g) (450 grams)
  • Crab meat, 1 cup (240 ml) (150 grams)
  • Cream cheese, softened, 8 ounce (227 g) s (225 grams)
  • Green onions, finely chopped, 2
  • Garlic, minced, 4 cloves
  • Soy sauce, 2 tablespoon (30 ml) s (30 milliliters)
  • Sesame oil, 1 tablespoon (15 ml) (15 milliliters)
  • Spring roll wrappers, 20 sheets
  • Vegetable oil, for frying
  • Salt, 1/2 teaspoon (3 ml) (2.5 grams)
  • Black pepper, 1/4 teaspoon (1 ml) (1 gram)
  • For the garlic dip:
  • Mayonnaise, 1/2 cup (120 ml) (120 milliliters)
  • Garlic, minced, 2 cloves
  • Lemon juice, 1 tablespoon (15 ml) (15 milliliters)
  • Soy sauce, 1 teaspoon (5 ml) (5 milliliters)
  • Sugar, 1 teaspoon (5 ml) (5 grams)
  • Salt, 1/4 teaspoon (1 ml) (1 gram)
  • Black pepper, a pinch


Instructions

  1. Chop the shrimp into small pieces and place them in a large mixing bowl.
  2. Add the crab meat and softened cream cheese to the bowl with the shrimp.
  3. Mix in the finely chopped green onions and minced garlic (4 cloves).
  4. Add soy sauce (2 tablespoons), sesame oil, salt, and black pepper to the mixture.
  5. Stir the mixture until all ingredients are well combined.
  6. Lay a spring roll wrapper on a clean surface with a corner facing you.
  7. Spoon about 1 tablespoon of the filling onto the wrapper near the corner closest to you.
  8. Fold the corner over the filling, then fold in the sides.
  9. Roll the wrapper tightly around the filling, sealing the edge with water.
  10. Repeat with remaining wrappers and filling.
  11. Heat vegetable oil in a deep pan over medium-high heat.
  12. Fry the spring rolls in batches until golden brown and crispy, about 3-5 minutes.
  13. Transfer fried spring rolls to a paper towel-lined plate to drain excess oil.
  14. For the garlic dip, combine mayonnaise and minced garlic (2 cloves) in a small bowl.
  15. Add lemon juice, soy sauce (1 teaspoon), sugar, salt, and black pepper to the mayonnaise.
  16. Stir the dip ingredients until well mixed.
  17. Serve the crispy spring rolls hot with the garlic dip on the side.
