Ingredients
- Flour tortillas, 8-inch (20 cm)
- 1 pound shrimp, peeled and deveined (450 g)
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon garlic powder (5 g)
- 1 teaspoon paprika (5 g)
- 1/2 teaspoon salt (2.5 g)
- 1/4 teaspoon black pepper (1 g)
- 2 cups shredded cheddar cheese (200 g)
- 1 cup shredded mozzarella cheese (100 g)
- 1/2 cup chopped fresh cilantro (30 g)
- 1/4 cup diced red onion (40 g)
- 1 jalapeño, seeded and diced
- 1 lime, cut into wedges for serving
Instructions
- Preheat a skillet over medium heat and add olive oil.
- In a bowl, combine shrimp with garlic powder, paprika, salt, and black pepper.
- Add the seasoned shrimp to the skillet and cook until pink and opaque, about 3-4 minutes per side.
- Remove the shrimp from the skillet and set aside.
- Wipe the skillet clean and return to medium heat.
- Place a flour tortilla in the skillet.
- Sprinkle 1/4 cup of cheddar cheese and 1/8 cup of mozzarella cheese evenly over half of the tortilla.
- Add a layer of cooked shrimp on top of the cheese.
- Sprinkle chopped cilantro, diced red onion, and diced jalapeño over the shrimp.
- Fold the tortilla in half to cover the filling.
- Cook the quesadilla for 2-3 minutes, pressing gently with a spatula, until golden and crispy.
- Flip the quesadilla and cook the other side for another 2-3 minutes.
- Repeat the process with remaining tortillas and fillings.
- Slice each quesadilla into wedges.
- Serve hot with lime wedges on the side.
