  • 1 pound shrimp, peeled and deveined (450 g)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon garlic powder (5 g)
  • 1 teaspoon paprika (5 g)
  • 1/2 teaspoon salt (2.5 g)
  • 1/4 teaspoon black pepper (1 g)
  • 2 cups shredded cheddar cheese (200 g)
  • 1 cup shredded mozzarella cheese (100 g)
  • 1/2 cup chopped fresh cilantro (30 g)
  • 1/4 cup diced red onion (40 g)
  • 1 jalapeño, seeded and diced
  • 1 lime, cut into wedges for serving

Instructions

  1. Preheat a skillet over medium heat and add olive oil.
  2. In a bowl, combine shrimp with garlic powder, paprika, salt, and black pepper.
  3. Add the seasoned shrimp to the skillet and cook until pink and opaque, about 3-4 minutes per side.
  4. Remove the shrimp from the skillet and set aside.
  5. Wipe the skillet clean and return to medium heat.
  6. Place a flour tortilla in the skillet.
  7. Sprinkle 1/4 cup of cheddar cheese and 1/8 cup of mozzarella cheese evenly over half of the tortilla.
  8. Add a layer of cooked shrimp on top of the cheese.
  9. Sprinkle chopped cilantro, diced red onion, and diced jalapeño over the shrimp.
  10. Fold the tortilla in half to cover the filling.
  11. Cook the quesadilla for 2-3 minutes, pressing gently with a spatula, until golden and crispy.
  12. Flip the quesadilla and cook the other side for another 2-3 minutes.
  13. Repeat the process with remaining tortillas and fillings.
  14. Slice each quesadilla into wedges.
  15. Serve hot with lime wedges on the side.

Notes

  • Consider enhancing the shrimp’s flavor by marinating them in the seasonings before cooking.
  • Customize your quesadillas with toppings like avocado, sour cream, or salsa for added variety.
  • Use high-quality cheese for a gooey, delicious texture in the quesadillas.
