Ingredients

  • 1 pound (454 g) (450 grams) large shrimp, shell-on
  • 1/2 cup (120 ml) (60 grams) cornstarch
  • 1 teaspoon (5 ml) salt
  • 1 teaspoon (5 ml) black pepper
  • 1/2 teaspoon (3 ml) white pepper
  • 1/2 teaspoon (3 ml) garlic powder
  • 1/2 teaspoon (3 ml) onion powder
  • 1/4 teaspoon (1 ml) cayenne pepper (optional)
  • 1/4 cup (60 ml) (60 milliliters) vegetable oil
  • 1 tablespoon (15 ml) minced garlic
  • 1 tablespoon (15 ml) minced ginger
  • 2 green onions, chopped
  • 1 jalapeño or chili, thinly sliced
  • 1 tablespoon (15 ml) soy sauce
  • 1 lime, cut into wedges (optional for serving)


Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In a bowl, mix cornstarch, salt, black pepper, white pepper, garlic powder, onion powder, and cayenne pepper.
  3. Toss the shrimp in the cornstarch mixture until evenly coated.
  4. Heat vegetable oil in a large skillet over medium-high heat.
  5. Add the shrimp to the skillet in a single layer, cooking in batches if necessary.
  6. Fry the shrimp for 2-3 minutes per side until they turn golden and crispy.
  7. Remove the shrimp from the skillet and drain on a paper towel-lined plate.
  8. In the same skillet, add minced garlic and ginger and sauté for about 30 seconds.
  9. Add the green onions and jalapeño or chili to the skillet, and stir for another 1-2 minutes.
  10. Return the shrimp to the skillet and toss to coat with the garlic, ginger, and chili mixture.
  11. Drizzle with soy sauce and stir briefly to combine.
  12. Remove from heat and transfer to a serving plate.
  13. Serve with lime wedges on the side, if desired.
