Ingredients
- 1 pound (454 g) (450 grams) large shrimp, shell-on
- 1/2 cup (120 ml) (60 grams) cornstarch
- 1 teaspoon (5 ml) salt
- 1 teaspoon (5 ml) black pepper
- 1/2 teaspoon (3 ml) white pepper
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) onion powder
- 1/4 teaspoon (1 ml) cayenne pepper (optional)
- 1/4 cup (60 ml) (60 milliliters) vegetable oil
- 1 tablespoon (15 ml) minced garlic
- 1 tablespoon (15 ml) minced ginger
- 2 green onions, chopped
- 1 jalapeño or chili, thinly sliced
- 1 tablespoon (15 ml) soy sauce
- 1 lime, cut into wedges (optional for serving)
Instructions
- Rinse the shrimp under cold water and pat dry with paper towels.
- In a bowl, mix cornstarch, salt, black pepper, white pepper, garlic powder, onion powder, and cayenne pepper.
- Toss the shrimp in the cornstarch mixture until evenly coated.
- Heat vegetable oil in a large skillet over medium-high heat.
- Add the shrimp to the skillet in a single layer, cooking in batches if necessary.
- Fry the shrimp for 2-3 minutes per side until they turn golden and crispy.
- Remove the shrimp from the skillet and drain on a paper towel-lined plate.
- In the same skillet, add minced garlic and ginger and sauté for about 30 seconds.
- Add the green onions and jalapeño or chili to the skillet, and stir for another 1-2 minutes.
- Return the shrimp to the skillet and toss to coat with the garlic, ginger, and chili mixture.
- Drizzle with soy sauce and stir briefly to combine.
- Remove from heat and transfer to a serving plate.
- Serve with lime wedges on the side, if desired.
