Ingredients

  • – 500g (17.6oz) King prawns, peeled and deveined
  • – 1/2 tsp (3 ml) Salt
  • – 1/2 tsp (3 ml) White pepper
  • – 1 tbsp (15 ml) Corn starch
  • – 1 tbsp (15 ml) Water
  • – 1/2 cup Corn starch (or potato starch, about 50g)
  • – 3-4 cloves Garlic, cut thin slices
  • – 1/2 Onion, cut thin slices
  • – 1 Red/Green bell pepper, cut thin slices
  • – 2-3 Spring onions, cut thin slices
  • – 1 tsp (5 ml) Dried chilli flakes (crushed chillies optional)
  • – Vegetable oil for frying
  • – 1/2 tsp (3 ml) Salt (fine salt)
  • – 1/2 tsp (3 ml) Black Pepper
  • – 1/2 tsp (3 ml) Chinese Five Spices
  • – 1/4 tsp (1 ml) Beef powder (optional)

Instructions

  1. In a small container, blend together the salt, black pepper, and Chinese five-spice powder thoroughly, then put aside.
  2. Season the prawns with salt, white pepper, corn starch, and water, ensuring they’re well coated before setting them aside.
  3. Individually coat each seasoned prawn in corn starch, shaking off any surplus before frying.
  4. Pour vegetable oil into a medium-sized pot to a depth of 2-3 inches. Heat the oil to approximately 350°F.
  5. Fry the coated prawns in the heated oil for 2-3 minutes until they achieve a crispy golden-brown texture. Take them out of the oil and let them drain on a cooling rack.
  6. Using a large wok or pan, warm a bit of oil over medium heat and sauté the garlic and onions.
  7. Add the bell peppers next, cooking briefly, then stir in the crushed chilies.
  8. Introduce the fried prawns to the pan, sprinkling them with the pre-mixed seasoning powder. Complete by adding the spring onions.
  9. Stir everything together for about a minute to ensure even distribution. Serve immediately and enjoy!
