Description

Ingredients

  • Beef fillets, 4 pieces (about 170 grams each)
  • Salt, 1 teaspoon (5 ml)
  • Black pepper, 1/2 teaspoon (3 ml)
  • Vegetable oil, 2 tablespoons (30 ml)
  • Fresh spinach, 3 cups (720 ml) (90 grams)
  • Garlic, 2 cloves, minced
  • Cheddar cheese, 1/2 cup (120 ml), grated (50 grams)
  • Cream cheese, 1/4 cup (60 ml) (60 grams)
  • Lemon juice, 1 tablespoon (15 ml)
  • Lemon zest, 1 teaspoon (5 ml)
  • Fresh parsley, 2 tablespoons (30 ml), chopped (8 grams)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the salmon fillets with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  3. Heat 1 tablespoon of olive oil in a pan over medium heat.
  4. Add the minced garlic and sauté for about 30 seconds.
  5. Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes.
  6. Remove the spinach from the heat and let it cool slightly.
  7. In a bowl, mix the cooked spinach, Parmesan cheese, cream cheese, lemon juice, lemon zest, and parsley.
  8. Season the mixture with the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  9. Make a slit in the side of each salmon fillet to create a pocket.
  10. Stuff each salmon pocket with the spinach and cheese mixture.
  11. Heat the remaining 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat.
  12. Place the stuffed salmon fillets in the skillet, skin side down.
  13. Cook the salmon for 3-4 minutes until the skin is crispy.
  14. Transfer the skillet to the preheated oven.
  15. Bake the salmon for 10-12 minutes, until cooked through.
  16. Remove the skillet from the oven and let the salmon rest for a few minutes.
  17. Serve the salmon warm, garnished with additional parsley if desired.
