Ingredients
- Beef fillets, 4 pieces (about 170 grams each)
- Salt, 1 teaspoon (5 ml)
- Black pepper, 1/2 teaspoon (3 ml)
- Vegetable oil, 2 tablespoons (30 ml)
- Fresh spinach, 3 cups (720 ml) (90 grams)
- Garlic, 2 cloves, minced
- Cheddar cheese, 1/2 cup (120 ml), grated (50 grams)
- Cream cheese, 1/4 cup (60 ml) (60 grams)
- Lemon juice, 1 tablespoon (15 ml)
- Lemon zest, 1 teaspoon (5 ml)
- Fresh parsley, 2 tablespoons (30 ml), chopped (8 grams)
Instructions
- Preheat the oven to 400°F (200°C).
- Season the salmon fillets with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Heat 1 tablespoon of olive oil in a pan over medium heat.
- Add the minced garlic and sauté for about 30 seconds.
- Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes.
- Remove the spinach from the heat and let it cool slightly.
- In a bowl, mix the cooked spinach, Parmesan cheese, cream cheese, lemon juice, lemon zest, and parsley.
- Season the mixture with the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Make a slit in the side of each salmon fillet to create a pocket.
- Stuff each salmon pocket with the spinach and cheese mixture.
- Heat the remaining 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat.
- Place the stuffed salmon fillets in the skillet, skin side down.
- Cook the salmon for 3-4 minutes until the skin is crispy.
- Transfer the skillet to the preheated oven.
- Bake the salmon for 10-12 minutes, until cooked through.
- Remove the skillet from the oven and let the salmon rest for a few minutes.
- Serve the salmon warm, garnished with additional parsley if desired.
