Ingredients
- 2 cups sushi rice
- 1 ripe avocado
- 8 oz fresh salmon, thinly sliced or in a spicy mix
- 1 jalapeño, thinly sliced
- 2 tablespoons sriracha
- 1 tablespoon sesame seeds
- 1 teaspoon salt
- Cooking oil for frying
Instructions
- Cook sushi rice according to package instructions and let it cool.
- Once cooled, form rice into small cakes.
- Heat oil in a skillet over medium heat and pan-fry the rice cakes until crispy on both sides.
- In a bowl, smash the avocado and season with salt.
- Prepare salmon by slicing it thinly or using a spicy salmon mix.
- Top each rice cake with smashed avocado and a slice of salmon.
- Add a thin slice of jalapeño on top, drizzle with sriracha, and sprinkle with sesame seeds.
- Serve immediately and enjoy!
