Description

A delightful combination of crispy rice and fresh sushi-grade salmon, topped with a zesty yuzu sauce for a perfect appetizer or light snack.

Ingredients

  • Fresh sushi-grade salmon
  • Yuzu kosho
  • Yuzu juice
  • Seasoned sushi rice
  • Soy sauce (for serving)
  • Scallions (for garnish)

Instructions

  1. Prepare the sushi rice as directed on the package. Season with rice vinegar, sugar, and salt.
  2. Let the rice cool before molding it into small rectangles or squares.
  3. Heat oil in a skillet over medium heat.
  4. Fry the rice bites until golden and crispy on both sides.
  5. Slice the sushi-grade salmon into bite-sized pieces.
  6. Mix yuzu kosho and yuzu juice to create a zesty drizzle.
  7. Remove the crispy rice from the pan and place a slice of salmon on each piece.
  8. Drizzle with the yuzu mixture and garnish with scallions.
  9. Serve with soy sauce on the side for dipping.

Notes

Make sure to monitor the frying process closely for the ideal crispy texture. Experiment with garnishing options such as sesame seeds or microgreens.
