Delicious crispy salmon fillets marinated in a sweet and tangy orange sauce, served over rice with vibrant mixed vegetables.

Ingredients

  • 2 Salmon fillets
  • 1/4 cup orange juice
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Pepper, to taste
  • 2 cups cooked rice
  • 2 cups mixed vegetables (such as broccoli, bell peppers, and carrots)
  • 1 tablespoon olive oil

Instructions

  1. In a bowl, mix orange juice, brown sugar, garlic powder, salt, and pepper to create a marinade.
  2. Marinate the salmon fillets for at least 15 minutes.
  3. Heat olive oil in a pan over medium heat.
  4. Remove salmon from marinade and pan-fry for about 4-5 minutes per side until crispy and cooked through.
  5. In another pot, steam or stir-fry mixed vegetables until tender.
  6. Serve the salmon over cooked rice, topped with the veggies and any remaining marinade if desired.

Notes

Experiment with adding orange zest or fresh ginger to the marinade for extra flavor.
