Ingredients
- 1 cup all-purpose flour
- 1 cup cornstarch
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cold water or club soda
- Seafood of choice (fish, shrimp, etc.)
- Oil for frying
Instructions
- Mix together flour, cornstarch, baking powder, salt, and black pepper in a bowl.
- Gradually add cold water or club soda while whisking until the batter is smooth.
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Dip your seafood into the batter, allowing excess to drip off.
- Carefully place the battered seafood in the hot oil and fry until golden brown and crispy, approximately 3-5 minutes.
- Remove and drain on paper towels. Serve hot.
Notes
Pat seafood dry before dipping for better batter adherence. Allow batter to sit briefly for improved lightness.
