Ingredients

  • 1 pound lobster meat (fresh or frozen, thawed)
  • 1 cup cornstarch (or all-purpose flour)
  • 2 large eggs, beaten
  • Salt, to taste
  • Pepper, to taste
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter


Instructions

  1. Start by cutting the lobster meat into bite-sized pieces.
  2. Season the pieces with salt and pepper, ensuring they are flavorful throughout.
  3. Set up a dredging station: place the cornstarch (or flour) in one bowl and the beaten eggs in another.
  4. Dip each lobster piece into the cornstarch, coating it well. Shake off any excess, then dip it into the beaten eggs.
  5. Heat the butter in a pan over medium-high heat until it starts to shimmer.
  6. Carefully place the coated lobster pieces into the hot butter. Fry until golden brown and crispy, about 3–4 minutes on each side.
  7. Once cooked, transfer the crispy bites to a paper towel-lined plate to absorb excess butter.
  8. When ready to serve, add minced garlic to the pan, letting it sizzle for a minute. Drizzle the garlicky butter over the crispy lobster bites.

Notes

For added crunch, double-dip the lobster pieces. Monitor oil temperature to ensure crispiness.
