- 1/2 cup cornstarch

- 2 large eggs
- 1 cup panko breadcrumbs
- 1 lb fresh fish fillets (cod or tilapia)
- Oil for frying (vegetable or canola)
Instructions
- Pat the fish fillets dry with paper towels to eliminate excess moisture.
- Mix the all-purpose flour, cornstarch, salt, and pepper together in a bowl until combined.
- Whisk the eggs in another bowl until frothy.
- Place panko breadcrumbs in a third bowl.
- Dip each fillet into the flour mixture, ensuring both sides are coated.
- Dunk it into the egg wash, letting any excess drip off.
- Press it into the panko breadcrumbs to ensure an even coating.
- Heat about half an inch of oil in a large skillet over medium-high heat until it shimmers.
- Carefully place the coated fish fillets into the hot oil without overcrowding.
- Fry each side for about 3-4 minutes or until golden brown and crispy.
- Transfer fried fish onto paper towels to drain excess oil.
- Serve immediately with lemon wedges or your favorite dipping sauce.
