Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 lb fresh fish fillets (cod or tilapia)
  • Oil for frying (vegetable or canola)


Instructions

  1. Pat the fish fillets dry with paper towels to eliminate excess moisture.
  2. Mix the all-purpose flour, cornstarch, salt, and pepper together in a bowl until combined.
  3. Whisk the eggs in another bowl until frothy.
  4. Place panko breadcrumbs in a third bowl.
  5. Dip each fillet into the flour mixture, ensuring both sides are coated.
  6. Dunk it into the egg wash, letting any excess drip off.
  7. Press it into the panko breadcrumbs to ensure an even coating.
  8. Heat about half an inch of oil in a large skillet over medium-high heat until it shimmers.
