Ingredients
- 4 cod fillets
- 1 cup all-purpose flour
- 1 cup breadcrumbs
- 2 eggs
- 1/2 cup milk
- Salt and pepper to taste
- 1 tsp paprika
- 4 sandwich buns
- Lettuce
- Tomato slices
- Tartar sauce
- Oil for frying
Instructions
- Whisk together eggs and milk in a shallow bowl.
- Combine flour, paprika, salt, and pepper in another bowl.
- Place breadcrumbs in a third bowl.
- Dip each cod fillet first in the flour mixture, then in the egg mixture, and finally coat with breadcrumbs.
- Heat oil in a large skillet over medium heat.
- Fry each fillet for about 4-5 minutes on each side until golden brown and cooked through.
- Assemble the sandwich by placing a piece of fried cod on a bun and topping with lettuce, tomato slices, and tartar sauce.
- Serve immediately.
Notes
For extra crunch, consider double breading the fish. Let fried cod rest on a wire rack to keep coating crispy.
