Ingredients
- 1 lb salmon fillets, cut into bite-sized pieces
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (or to taste)
- Salt and pepper to taste
- Vegetable oil (for frying)
- Green onions (for garnish)
Instructions
- In a bowl, mix mayonnaise, sweet chili sauce, and sriracha; set aside.
- Season salmon pieces with salt and pepper.
- Dredge each piece in flour, dip in beaten eggs, then coat with panko breadcrumbs.
- Heat vegetable oil in a pan over medium heat.
- Fry the salmon bites until golden brown and crispy, about 3-4 minutes per side.
- Drain on paper towels.
- Serve warm with the spicy mayo sauce on the side and garnish with chopped green onions.
