Ingredients

  • 1 cup (240 ml) (120 grams) all-purpose flour
  • 1/2 cup (120 ml) (60 grams) cornstarch
  • 1 teaspoon (5 ml) (5 grams) baking powder
  • 1 teaspoon (5 ml) (5 grams) garlic powder
  • 1 teaspoon (5 ml) (5 grams) onion powder
  • 1 teaspoon (5 ml) (5 grams) paprika
  • 1/2 teaspoon (3 ml) (2 grams) cayenne pepper
  • 1 teaspoon (5 ml) (5 grams) salt
  • 1/2 teaspoon (3 ml) (2 grams) black pepper
  • 2 large eggs
  • 1/2 cup (120 ml) (120 milliliters) cold water
  • Vegetable oil for frying
  • Lemon wedges for serving


Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In a large bowl, combine the flour, cornstarch, baking powder, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper.
  3. In a separate bowl, beat the eggs with the cold water until well mixed.
  4. Heat vegetable oil in a deep pan or fryer to 350°F (175°C).
  5. Dip each shrimp into the flour mixture, shaking off excess.
  6. Dip the floured shrimp into the egg mixture, ensuring they are fully coated.
  7. Return the shrimp to the flour mixture, pressing gently to adhere.
  8. Carefully place a few shrimp into the hot oil, without crowding the pan.
  9. Fry shrimp for 2-3 minutes, or until golden brown and crispy.
  10. Use a slotted spoon to remove the shrimp and drain on paper towels.
  11. Repeat the frying process with the remaining shrimp.
  12. Serve the crispy and spicy fried shrimp with lemon wedges.
