Ingredients
- 1/4 cup (60 ml) mayonnaise
- 1/2 tablespoon (8 ml) sriracha plus more to taste, up to 1 tablespoon (15 ml)
- 1/2 teaspoon (3 ml) lemon juice
- 1 clove garlic minced
- Salt to taste
- 1/2 cup (120 ml) all-purpose flour see Notes
- 1 tablespoon (15 ml) Old Bay seasoning
- 2 large eggs whisked
- 1 cup (240 ml) panko breadcrumbs see Notes
- 1 pound (454 g) large, uncooked shrimp peeled, deveined
Instructions
- Combine the mayonnaise, sriracha, lemon juice, minced garlic, and a pinch of salt in a small bowl. Stir the mixture well until it is smooth and well-blended. Cover the bowl and place it in the refrigerator until you are ready to use it.
- In a shallow dish, thoroughly mix the all-purpose flour and Old Bay seasoning. Set this mixture aside for later use.
- In a second shallow dish, crack the eggs and whisk them briskly until they are uniformly mixed without visible streaks. Set this aside as well.
- Place the panko breadcrumbs in a third shallow dish and set them aside.
- Set your air fryer to 400° Fahrenheit to preheat. Use paper towels to ensure the shrimp are completely dry.
- Individually, roll each shrimp in the flour and seasoning mix, then shake off any surplus. Dip the floured shrimp into the beaten eggs, allowing any extra to drip off before coating both sides with breadcrumbs. Press the breadcrumbs gently onto the shrimp to ensure they stick, then place the shrimp on a plate. Continue this process until all the shrimp are coated.
- Spray the air fryer basket lightly with cooking spray. Arrange the shrimp in the basket, making sure they are not touching or crowded. Lightly mist the tops of the shrimp with cooking spray as well.
- Insert the basket into the air fryer and cook for 6 minutes. Check the shrimp after this time, and if necessary, cook for an additional 1 to 2 minutes until they are golden and cooked through.
- Take the shrimp out of the air fryer. Repeat the frying process for any remaining shrimp until all are cooked. Serve right away with the sriracha mayo.
