Description

A delightful linguine dish featuring succulent shrimp in a creamy Tuscan sauce with cherry tomatoes and spinach.


Ingredients

  • 8 oz linguine
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Cook the linguine according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the garlic and sauté for about 30 seconds.
  3. Add the shrimp and cook until they turn pink, about 2-3 minutes per side.
  4. Introduce the halved cherry tomatoes and cook for another 2 minutes.
  5. Stir in the heavy cream and spinach, cooking until the spinach wilts and the sauce begins to thicken.
  6. Add the drained linguine and grated Parmesan cheese to the skillet, tossing gently to combine.
  7. Season with salt and pepper, adjusting to taste.
  8. Serve warm, garnished with fresh basil.
