Description

Indulge in luxurious creamy Tuscan scallops with layers of flavor from heavy cream, nutty Parmesan, fresh spinach, and sun-dried tomatoes.


Ingredients

  • 16 oz Scallops
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1/2 cup Sun-dried tomatoes, chopped
  • 2 cups Fresh spinach
  • 1 cup Heavy cream
  • 1/2 cup Grated Parmesan cheese
  • 1 tsp Salt
  • 1/2 tsp Pepper


Instructions

  1. In a skillet, heat olive oil over medium-high heat.
  2. Season the scallops with salt and pepper, then sear them for 2-3 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant.
  4. Add sun-dried tomatoes and fresh spinach, and cook until the spinach wilts.
  5. Pour in the heavy cream and add grated Parmesan cheese, stirring until thickened.
  6. Return the scallops to the skillet, coating them in the sauce.
  7. Serve immediately.

Notes

For extra flavor, consider using garlic-infused olive oil. Adjust the sauce consistency with more cream or by reducing it.
