Description

A rich and indulgent creamy salmon dish infused with sun-dried tomatoes, spinach, and parmesan, embodying the flavors of the Mediterranean.


Ingredients

  • 3 salmon filets (about 1 pound total)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • ½ white onion, diced
  • ½ cup sun-dried tomatoes in oil, chopped
  • ½ cup cherry tomatoes, halved
  • 1 tablespoon minced garlic
  • 1 cup heavy cream
  • ½ cup freshly shredded Parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 cup fresh baby spinach
  • Salt, to taste


Instructions

  1. Pat the salmon dry with a paper towel and season both sides with kosher salt and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the salmon filets and sear for 3-4 minutes on each side until golden brown.
  4. Remove the salmon from the skillet and set aside.
  5. Add diced onions, sun-dried tomatoes, cherry tomatoes, and minced garlic to the same skillet.
  6. Cook for about 5 minutes until fragrant and softened.
  7. Stir in heavy cream, parmesan cheese, paprika, and Italian seasoning.
  8. Incorporate fresh spinach and let the sauce simmer.
  9. Return the salmon to the skillet and spoon the sauce over it, cooking for an additional 5-10 minutes until fully cooked.

Notes

Serve with a sprinkle of parmesan and fresh herbs for added flavor. Pair with salad or light pasta.
