Ingredients

  • 1 lb salmon fillets (450 g)
  • 1 tbsp olive oil (15 ml)
  • Salt, to taste
  • Black pepper, to taste
  • 2 cloves garlic, minced
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml)
  • 1/2 cup grated Parmesan cheese (45 g)
  • 1 tsp Italian seasoning (5 g)
  • 2 cups fresh spinach leaves (60 g)
  • 1/2 cup sun-dried tomatoes, chopped (80 g)


Instructions

  1. Season the salmon fillets with salt and black pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Place the salmon fillets skin-side down in the skillet and cook for 4-5 minutes.
  4. Flip the salmon fillets and cook for another 4-5 minutes until cooked through.
  5. Remove the salmon from the skillet and set aside.
  6. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  7. Pour in the heavy cream and chicken broth, stirring to combine.
  8. Add grated Parmesan cheese and Italian seasoning to the skillet.
  9. Stir the sauce until the Parmesan cheese is melted and the sauce is smooth.
  10. Add the fresh spinach leaves and sun-dried tomatoes to the sauce.
  11. Cook for 2-3 minutes until the spinach is wilted.
  12. Return the salmon fillets to the skillet, spooning the sauce over them.
  13. Simmer for an additional 2-3 minutes to heat through.
  14. Adjust seasoning with salt and black pepper if needed.
  15. Serve the creamy Tuscan salmon hot with the sauce spooned over the top.
