Ingredients
- 1 lb salmon fillets (450 g)
- 1 tbsp olive oil (15 ml)
- Salt, to taste
- Black pepper, to taste
- 2 cloves garlic, minced
- 1 cup heavy cream (240 ml)
- 1/2 cup chicken broth (120 ml)
- 1/2 cup grated Parmesan cheese (45 g)
- 1 tsp Italian seasoning (5 g)
- 2 cups fresh spinach leaves (60 g)
- 1/2 cup sun-dried tomatoes, chopped (80 g)
Instructions
- Season the salmon fillets with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat.
- Place the salmon fillets skin-side down in the skillet and cook for 4-5 minutes.
- Flip the salmon fillets and cook for another 4-5 minutes until cooked through.
- Remove the salmon from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine.
- Add grated Parmesan cheese and Italian seasoning to the skillet.
- Stir the sauce until the Parmesan cheese is melted and the sauce is smooth.
- Add the fresh spinach leaves and sun-dried tomatoes to the sauce.
- Cook for 2-3 minutes until the spinach is wilted.
- Return the salmon fillets to the skillet, spooning the sauce over them.
- Simmer for an additional 2-3 minutes to heat through.
- Adjust seasoning with salt and black pepper if needed.
- Serve the creamy Tuscan salmon hot with the sauce spooned over the top.
