Ingredients
- 200g pasta (your choice)
- 200g fresh shrimp, peeled and deveined
- 1 cup ripe tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for garnish (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add the shrimp to the skillet and cook until pink and cooked through, about 3-4 minutes.
- Stir in the chopped tomatoes and cook for 2 minutes, allowing them to soften.
- Add the spinach and cook until wilted.
- Pour in the heavy cream, stirring to combine. Season with salt and pepper.
- Add the cooked pasta to the skillet and toss to coat in the creamy sauce.
- Serve hot, garnished with Parmesan cheese if desired.

For additional flavor, consider adding lemon zest or red pepper flakes. Fresh herbs like basil pair well with the dish.
