This creamy spinach salmon pasta combines rich cream, fresh spinach, and tender salmon for a comforting and indulgent meal.
Ingredients
- 8 oz pasta (fettuccine or linguine)
- 2 salmon fillets
- 2 cups fresh spinach
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Season the salmon fillets with salt and pepper, and cook for about 4-5 minutes on each side, or until cooked through. Remove from the skillet and flake into pieces.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add the heavy cream, bringing it to a simmer; then stir in the fresh spinach until wilted.
- Combine the cooked pasta and flaked salmon with the cream sauce. Toss everything together until well coated.
- Serve hot, garnished with grated Parmesan cheese.
