A comforting and creamy pasta dish featuring salmon and fresh spinach, perfect for a weeknight dinner.
Ingredients
- 8 oz pasta (e.g., fettuccine or linguine)
- 2 salmon fillets
- 2 cups fresh spinach
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Season salmon with salt and pepper, then add to the skillet. Cook for about 4-5 minutes on each side or until cooked through. Remove and flake into pieces.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Add heavy cream and bring to a simmer. Stir in fresh spinach until wilted.
- Combine cooked pasta and flaked salmon with the cream sauce. Mix well and adjust seasoning if needed.
- Serve hot, topped with Parmesan cheese.
