Ingredients
- 8 oz (227 g) fettuccine pasta
- 1 lb (454 g) large shrimp, peeled and deveined
- 2 tbsp (30 ml) olive oil
- 3 cloves garlic, minced
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) grated Parmesan cheese
- 1 cup (240 ml) beef broth
- 1 tsp (5 ml) Italian seasoning
- Salt and pepper, to taste
- 2 tbsp (30 ml) fresh parsley, chopped
- 1/4 cup (30 g) sun-dried tomatoes, chopped
- 1/4 cup (60 ml) vegetable broth (for boiling pasta)
Instructions
- Bring a large pot of salted water to a boil.
- Add the fettuccine pasta and cook according to package instructions until al dente.
- Drain the pasta, reserving 1/4 cup of the pasta water, and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the shrimp to the skillet and season with salt and pepper.
- Cook the shrimp for 2-3 minutes on each side until pink and opaque.
- Remove the shrimp from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream and sun-dried tomatoes.
- Add Italian seasoning, salt, and pepper to the sauce.
- Simmer the sauce for 5 minutes, stirring occasionally.
- Reduce the heat and add the grated Parmesan cheese.
- Stir continuously until the cheese is melted and the sauce is creamy.
- Add the cooked pasta and shrimp back into the skillet.
- Toss everything together, ensuring the pasta and shrimp are well coated with the sauce.
- If needed, add reserved pasta water to adjust the sauce consistency.
- Garnish with chopped fresh parsley.
- Serve immediately.
