Ingredients

  • 8 oz (227 g) fettuccine pasta
  • 1 lb (454 g) large shrimp, peeled and deveined
  • 2 tbsp (30 ml) olive oil
  • 3 cloves garlic, minced
  • 1 cup (240 ml) heavy cream
  • 1 cup (100 g) grated Parmesan cheese
  • 1 cup (240 ml) beef broth
  • 1 tsp (5 ml) Italian seasoning
  • Salt and pepper, to taste
  • 2 tbsp (30 ml) fresh parsley, chopped
  • 1/4 cup (30 g) sun-dried tomatoes, chopped
  • 1/4 cup (60 ml) vegetable broth (for boiling pasta)


Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the fettuccine pasta and cook according to package instructions until al dente.
  3. Drain the pasta, reserving 1/4 cup of the pasta water, and set aside.
  4. In a large skillet, heat olive oil over medium heat.
  5. Add the shrimp to the skillet and season with salt and pepper.
  6. Cook the shrimp for 2-3 minutes on each side until pink and opaque.
  7. Remove the shrimp from the skillet and set aside.
  8. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  9. Pour in the chicken broth and bring to a simmer.
  10. Stir in the heavy cream and sun-dried tomatoes.
  11. Add Italian seasoning, salt, and pepper to the sauce.
  12. Simmer the sauce for 5 minutes, stirring occasionally.
  13. Reduce the heat and add the grated Parmesan cheese.
  14. Stir continuously until the cheese is melted and the sauce is creamy.
  15. Add the cooked pasta and shrimp back into the skillet.
  16. Toss everything together, ensuring the pasta and shrimp are well coated with the sauce.
  17. If needed, add reserved pasta water to adjust the sauce consistency.
  18. Garnish with chopped fresh parsley.
  19. Serve immediately.
