Ingredients

  • 1 pound (454 g) shrimp, peeled and deveined (450 grams)
  • 2 tablespoons (30 ml) olive oil (30 milliliters)
  • 1 cup (240 ml) diced onion (150 grams)
  • 2 cloves garlic, minced
  • 1 cup (240 ml) diced celery (150 grams)
  • 1 cup (240 ml) diced carrots (150 grams)
  • 2 tablespoons (30 ml) tomato paste (30 grams)
  • 1 teaspoon (5 ml) paprika
  • 1/4 teaspoon (1 ml) cayenne pepper
  • 4 cups (960 ml) vegetable broth (960 milliliters)
  • 1 cup (240 ml) coconut cream (240 milliliters)
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon (15 ml) lemon juice (15 milliliters)
  • 2 tablespoons (30 ml) chopped fresh parsley (10 grams)


Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat.
  2. Add the shrimp and cook until pink and opaque, about 3-4 minutes.
  3. Remove shrimp from the pot and set aside.
  4. Add the remaining tablespoon of olive oil to the pot.
  5. Sauté the diced onion, celery, and carrots until softened, about 5-7 minutes.
  6. Stir in the minced garlic and cook for an additional 1 minute.
  7. Add the tomato paste, paprika, and cayenne pepper, stirring until well combined.
  8. Pour in the fish or vegetable broth, and bring to a simmer.
  9. Reduce heat and let the mixture simmer for 20 minutes.
  10. Use an immersion blender to puree the soup until smooth.
  11. Return the pot to the stove over low heat.
  12. Stir in the heavy cream and lemon juice.
  13. Chop the cooked shrimp into bite-sized pieces and add back to the pot.
  14. Season with salt and black pepper to taste.
  15. Gently heat the bisque until warmed through, without boiling.
  16. Garnish with chopped fresh parsley before serving.
