Ingredients

  • 1 pound (454 g) (450 grams) shrimp, peeled and deveined
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (5 ml) (5 grams) garlic powder
  • 1 teaspoon (5 ml) (5 grams) onion powder
  • 1 teaspoon (5 ml) (5 grams) paprika
  • Salt, to taste
  • Black pepper, to taste
  • 8 small flour tortillas
  • 2 cup (480 ml) s (60 grams) fresh spinach, chopped
  • 1 cup (240 ml) heavy cream
  • 1 cup (240 ml) (100 grams) shredded mozzarella cheese
  • 1/2 cup (120 ml) (50 grams) grated Parmesan cheese
  • 1 tablespoon (15 ml) (15 grams) butter
  • 1 tablespoon (15 ml) (8 grams) all-purpose flour
  • 1 cup (240 ml) milk
  • 1/2 teaspoon (3 ml) (2.5 grams) dried oregano
  • 1/2 teaspoon (3 ml) (2.5 grams) dried basil
  • 1/4 teaspoon (1 ml) (1.25 grams) red pepper flakes (optional )


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add shrimp to the skillet and season with garlic powder, onion powder, paprika, salt, and black pepper.
  4. Cook shrimp for 3-4 minutes until pink and opaque. Set aside.
  5. In the same skillet, melt butter over medium heat.
  6. Stir in flour and cook for 1 minute to form a roux.
  7. Gradually whisk in milk, ensuring no lumps form.
  8. Add heavy cream and cook until the sauce thickens, about 3-4 minutes.
  9. Stir in chopped spinach and cook until wilted.
  10. Add Parmesan cheese, oregano, basil, and red pepper flakes. Stir until cheese melts.
  11. Layer a tortilla on a baking sheet.
  12. Spread some sauce over the tortilla, then add shrimp and mozzarella cheese.
  13. Repeat layering with remaining tortillas, sauce, shrimp, and mozzarella.
  14. Top the final tortilla stack with extra mozzarella cheese.
  15. Bake in the oven for 15-20 minutes until cheese is melted and bubbly.
  16. Remove from oven and let cool for 5 minutes before slicing.
  17. Serve warm and enjoy.
