Ingredients
- 1 pound (454 g) (450 grams) shrimp, peeled and deveined
- 1 tablespoon (15 ml) olive oil
- 1 teaspoon (5 ml) (5 grams) garlic powder
- 1 teaspoon (5 ml) (5 grams) onion powder
- 1 teaspoon (5 ml) (5 grams) paprika
- Salt, to taste
- Black pepper, to taste
- 8 small flour tortillas
- 2 cup (480 ml) s (60 grams) fresh spinach, chopped
- 1 cup (240 ml) heavy cream
- 1 cup (240 ml) (100 grams) shredded mozzarella cheese
- 1/2 cup (120 ml) (50 grams) grated Parmesan cheese
- 1 tablespoon (15 ml) (15 grams) butter
- 1 tablespoon (15 ml) (8 grams) all-purpose flour
- 1 cup (240 ml) milk
- 1/2 teaspoon (3 ml) (2.5 grams) dried oregano
- 1/2 teaspoon (3 ml) (2.5 grams) dried basil
- 1/4 teaspoon (1 ml) (1.25 grams) red pepper flakes (optional )
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Add shrimp to the skillet and season with garlic powder, onion powder, paprika, salt, and black pepper.
- Cook shrimp for 3-4 minutes until pink and opaque. Set aside.
- In the same skillet, melt butter over medium heat.
- Stir in flour and cook for 1 minute to form a roux.
- Gradually whisk in milk, ensuring no lumps form.
- Add heavy cream and cook until the sauce thickens, about 3-4 minutes.
- Stir in chopped spinach and cook until wilted.
- Add Parmesan cheese, oregano, basil, and red pepper flakes. Stir until cheese melts.
- Layer a tortilla on a baking sheet.
- Spread some sauce over the tortilla, then add shrimp and mozzarella cheese.
- Repeat layering with remaining tortillas, sauce, shrimp, and mozzarella.
- Top the final tortilla stack with extra mozzarella cheese.
- Bake in the oven for 15-20 minutes until cheese is melted and bubbly.
- Remove from oven and let cool for 5 minutes before slicing.
- Serve warm and enjoy.
