Ingredients

  • 4 sheets of whole grain lasagna noodles
  • 4 oz (113 g). cooked shrimp, chopped
  • 1/3 cup (80 ml) ricotta cheese, part skim
  • 1/2 cup (120 ml) shredded moz zarella cheese, part skim
  • 1 egg white
  • 1/2 tsp (3 ml) Italian seasoning
  • Black pepper, to taste
  • 1/2 cup (120 ml) marinara sauce, low sodium
  • 1/2 cup (120 ml) froz en spinach


Instructions

  1. Set your oven to a temperature of 350°F. Spread ¼ cup of marinara sauce evenly on the bottom of a baking dish.
  2. Prepare the lasagna noodles by following the instructions on the package, then drain them and let them cool.
  3. Cook the spinach as per the package instructions, drain it thoroughly, and press out as much moisture as possible.
  4. In a mixing bowl, blend together the ricotta cheese, ¼ cup of the shredded mozzarella, egg white, Italian seasoning, and black pepper.
  5. Gently mix the chopped shrimp into the cheese mixture.
  6. Take one lasagna noodle and place roughly 2 tablespoons of the shrimp and cheese mixture on one end, then roll it up and place it in the prepared baking dish. Repeat this process with the remaining noodles and filling.
  7. Drizzle the rest of the marinara sauce over the top of the rolled noodles.
  8. Cover the dish with a lid or foil and place it in the oven to bake for 25 minutes.
  9. Remove the cover, sprinkle the remaining mozzarella cheese over the top, and bake for an additional 5 minutes until the cheese is melted.
