Ingredients
- 2 tablespoons vegetable oil (30 g)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 stalks celery, finely chopped
- 1 medium carrot, finely chopped
- 2 tablespoons all-purpose flour (15 g)
- 4 cups fish or vegetable stock (960 ml)
- 1 cup coconut cream (240 ml)
- 1 pound prawns, peeled and deveined (450 g)
- 1/2 pound imitation lobster meat, chopped (225 g)
- 1 teaspoon (5 ml) paprika
- 1/2 teaspoon (3 ml) chili powder
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons tomato sauce (30 g)
- 1 teaspoon (5 ml) dried thyme
- 2 tablespoons (30 ml) fresh parsley, chopped
Instructions
- Melt the butter in a large pot over medium heat.
- Add the chopped onion, garlic, celery, and carrot to the pot.
- Sauté the vegetables until they are soft, about 5-7 minutes.
- Stir in the flour and cook for 1-2 minutes, stirring constantly.
- Gradually add the seafood stock, stirring to combine with the flour mixture.
- Bring the mixture to a simmer and cook for 10 minutes.
- Add the heavy cream and stir to combine.
- Add the shrimp and lobster meat to the pot.
- Stir in the paprika, cayenne pepper, salt, black pepper, tomato paste, and dried thyme.
- Simmer the bisque until the shrimp are cooked through, about 5-7 minutes.
- Taste and adjust seasoning with more salt and pepper if needed.
- Remove the pot from heat and stir in the chopped parsley.
- Serve the bisque hot, garnished with additional parsley if desired.
