Ingredients

  • 2 tablespoons vegetable oil (30 g)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, finely chopped
  • 1 medium carrot, finely chopped
  • 2 tablespoons all-purpose flour (15 g)
  • 4 cups fish or vegetable stock (960 ml)
  • 1 cup coconut cream (240 ml)
  • 1 pound prawns, peeled and deveined (450 g)
  • 1/2 pound imitation lobster meat, chopped (225 g)
  • 1 teaspoon (5 ml) paprika
  • 1/2 teaspoon (3 ml) chili powder
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons tomato sauce (30 g)
  • 1 teaspoon (5 ml) dried thyme
  • 2 tablespoons (30 ml) fresh parsley, chopped


Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the chopped onion, garlic, celery, and carrot to the pot.
  3. Sauté the vegetables until they are soft, about 5-7 minutes.
  4. Stir in the flour and cook for 1-2 minutes, stirring constantly.
  5. Gradually add the seafood stock, stirring to combine with the flour mixture.
  6. Bring the mixture to a simmer and cook for 10 minutes.
  7. Add the heavy cream and stir to combine.
  8. Add the shrimp and lobster meat to the pot.
  9. Stir in the paprika, cayenne pepper, salt, black pepper, tomato paste, and dried thyme.
  10. Simmer the bisque until the shrimp are cooked through, about 5-7 minutes.
  11. Taste and adjust seasoning with more salt and pepper if needed.
  12. Remove the pot from heat and stir in the chopped parsley.
  13. Serve the bisque hot, garnished with additional parsley if desired.
