Description

A comforting dish combining rich salmon with creamy sauce and vibrant vegetables, perfect for any occasion.

Ingredients

  • 200g pasta (fettuccine, spaghetti, or your choice)
  • 200g salmon fillet
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add the salmon fillet to the skillet and cook for about 4-5 minutes on each side or until cooked through. Remove from skillet and flake into pieces.
  4. In the same skillet, add the cherry tomatoes and spinach. Cook until the spinach wilts.
  5. Reduce the heat and pour in the heavy cream, stirring to combine.
  6. Add the flaked salmon and cooked pasta to the skillet. Toss everything together until well coated.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with grated Parmesan cheese and fresh herbs if desired.

Notes

For a lighter version, substitute half of the cream with vegetable broth or low-fat milk. Don’t forget to monitor the heat while cooking the salmon.
