A comforting dish combining rich salmon with creamy sauce and vibrant vegetables, perfect for any occasion.
Ingredients
- 200g pasta (fettuccine, spaghetti, or your choice)
- 200g salmon fillet
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
- Fresh basil or parsley for garnish (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add the salmon fillet to the skillet and cook for about 4-5 minutes on each side or until cooked through. Remove from skillet and flake into pieces.
- In the same skillet, add the cherry tomatoes and spinach. Cook until the spinach wilts.
- Reduce the heat and pour in the heavy cream, stirring to combine.
- Add the flaked salmon and cooked pasta to the skillet. Toss everything together until well coated.
- Season with salt and pepper to taste.
- Serve warm, garnished with grated Parmesan cheese and fresh herbs if desired.
Notes
For a lighter version, substitute half of the cream with vegetable broth or low-fat milk. Don’t forget to monitor the heat while cooking the salmon.
