Description

A comforting dish featuring pasta enveloped in a luscious cream sauce, tender salmon, and vibrant vegetables.


Ingredients

  • 8 oz pasta (penne or fusilli preferred)
  • 1 tablespoon olive oil
  • 2 salmon fillets
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Season the salmon with salt and pepper, then add to the skillet. Cook for about 4-5 minutes per side until cooked through. Remove salmon and flake it into pieces.
  4. In the same skillet, add garlic and sauté for 1 minute.
  5. Add spinach and cherry tomatoes, cooking until spinach wilts and tomatoes soften.
  6. Pour in heavy cream and stir to combine.
  7. Add the cooked pasta and flaked salmon to the skillet, tossing everything together until heated through.
  8. Serve with Parmesan cheese if desired.

Notes

For a lighter version, consider substituting half of the heavy cream with low-fat milk or chicken broth.
