A comforting dish featuring pasta enveloped in a luscious cream sauce, tender salmon, and vibrant vegetables.
Ingredients
- 8 oz pasta (penne or fusilli preferred)
- 1 tablespoon olive oil
- 2 salmon fillets
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 clove garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Season the salmon with salt and pepper, then add to the skillet. Cook for about 4-5 minutes per side until cooked through. Remove salmon and flake it into pieces.
- In the same skillet, add garlic and sauté for 1 minute.
- Add spinach and cherry tomatoes, cooking until spinach wilts and tomatoes soften.
- Pour in heavy cream and stir to combine.
- Add the cooked pasta and flaked salmon to the skillet, tossing everything together until heated through.
- Serve with Parmesan cheese if desired.
Notes
For a lighter version, consider substituting half of the heavy cream with low-fat milk or chicken broth.
