Ingredients
- 2 cups pasta
- 1 lb salmon fillet
- 2 cups fresh spinach
- 1 cup cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Season the salmon with salt and pepper, and add it to the skillet. Cook until flaky, about 4-5 minutes per side. Remove and set aside.
- Add minced garlic to the same skillet and sauté until fragrant. Pour in the cream and bring to a simmer.
- Stir in fresh spinach and cook until wilted.
- Flake the cooked salmon and add it to the skillet with the sauce.
- Add the cooked pasta and toss to combine.
- Serve warm, topped with grated Parmesan cheese.
Notes
For a lighter dish, consider using half-and-half instead of cream. Add a squeeze of lemon juice for brightness.
