Description

A rich and comforting creamy salmon pasta dish that combines fresh ingredients for a gourmet meal that’s approachable for home cooks.


Ingredients

  • 2 cups pasta
  • 1 lb salmon fillet
  • 2 cups fresh spinach
  • 1 cup cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Season the salmon with salt and pepper, and add it to the skillet. Cook until flaky, about 4-5 minutes per side. Remove and set aside.
  3. Add minced garlic to the same skillet and sauté until fragrant. Pour in the cream and bring to a simmer.
  4. Stir in fresh spinach and cook until wilted.
  5. Flake the cooked salmon and add it to the skillet with the sauce.
  6. Add the cooked pasta and toss to combine.
  7. Serve warm, topped with grated Parmesan cheese.

Notes

For a lighter dish, consider using half-and-half instead of cream. Add a squeeze of lemon juice for brightness.
