Description

A delightful dish combining flaky salmon with a rich, velvety cream sauce, fresh spinach, and sun-dried tomatoes, perfect for a cozy evening.


Ingredients

  • 4 pieces of salmon fillets (about 6 oz each)
  • Salt and black pepper to taste
  • 2 tablespoons of olive oil
  • 3 cloves of garlic (minced)
  • 1 small onion (finely chopped)
  • 1 cup of heavy cream
  • 0.5 cup of chicken broth
  • 0.5 cup of Parmesan cheese (grated)
  • 2 cups of fresh spinach (roughly chopped)
  • 0.5 cup of sun-dried tomatoes (chopped)
  • Optional fresh lemon juice for serving
  • Optional fresh parsley (chopped, for garnish)


Instructions

  1. Season salmon with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat. Place salmon skin-side down and cook for 4 to 5 minutes. Flip and cook for another 3 to 4 minutes. Remove and set aside.
  3. In the same skillet, sauté garlic and onion until softened.
  4. Pour in cream and broth. Stir and let simmer until slightly thickened.
  5. Add Parmesan and stir until smooth. Add spinach and sun-dried tomatoes. Cook until spinach wilts.
  6. Return salmon to skillet. Spoon sauce over each fillet. Let heat through for another minute.
  7. Garnish with parsley and lemon juice if desired. Serve warm.

Notes

For brighter flavors, add fresh lemon juice before serving. Customize with different vegetables or herbs to suit your taste.
