Description
A delightful dish combining flaky salmon with a rich, velvety cream sauce, fresh spinach, and sun-dried tomatoes, perfect for a cozy evening.
Ingredients
- 4 pieces of salmon fillets (about 6 oz each)
- Salt and black pepper to taste
- 2 tablespoons of olive oil
- 3 cloves of garlic (minced)
- 1 small onion (finely chopped)
- 1 cup of heavy cream
- 0.5 cup of chicken broth
- 0.5 cup of Parmesan cheese (grated)
- 2 cups of fresh spinach (roughly chopped)
- 0.5 cup of sun-dried tomatoes (chopped)
- Optional fresh lemon juice for serving
- Optional fresh parsley (chopped, for garnish)
Instructions
- Season salmon with salt and pepper on both sides.
- Heat olive oil in a skillet over medium-high heat. Place salmon skin-side down and cook for 4 to 5 minutes. Flip and cook for another 3 to 4 minutes. Remove and set aside.
- In the same skillet, sauté garlic and onion until softened.
- Pour in cream and broth. Stir and let simmer until slightly thickened.
- Add Parmesan and stir until smooth. Add spinach and sun-dried tomatoes. Cook until spinach wilts.
- Return salmon to skillet. Spoon sauce over each fillet. Let heat through for another minute.
- Garnish with parsley and lemon juice if desired. Serve warm.
Notes
For brighter flavors, add fresh lemon juice before serving. Customize with different vegetables or herbs to suit your taste.
