Ingredients
- 4 salmon fillets
- 1 cup roasted red peppers (jarred or homemade)
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Combine roasted red peppers, heavy cream, garlic, and a pinch of salt and pepper in a blender and blend until smooth.
- Heat olive oil in an oven-safe skillet over medium heat. Season salmon fillets with salt and pepper and place them skin-side down in the skillet.
- Cook for 3-4 minutes, then carefully flip the fillets. Pour the roasted red pepper sauce over the salmon.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve the salmon garnished with fresh parsley if desired, alongside vegetables or rice.

Adjust the thickness of your sauce by changing the amount of heavy cream you use. Marinating the salmon in the red pepper sauce for a brief period enhances flavor and tenderness.
