Description

Indulge in this rich and creamy shrimp pasta dish that combines succulent shrimp, heavy cream, and sun-dried tomatoes for an unforgettable meal.


Ingredients

  • 8 oz penne pasta (or pasta of choice)
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, about 8-10 minutes. Drain the pasta and reserve about 1/2 cup of pasta water.
  2. In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat. Season the shrimp with salt and black pepper, then add to the skillet and cook for 1-2 minutes per side until pink. Remove and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and 1 tablespoon of butter. Sauté the minced garlic for about 30 seconds, then add the chopped sun-dried tomatoes and cook for an additional minute.
  4. Pour in the heavy cream and stir in the grated Parmesan cheese, Italian seasoning, and optional red pepper flakes. Let the sauce simmer for 3-4 minutes until thickened.
  5. Toss the drained pasta in the skillet with the sauce, adding reserved pasta water as needed to achieve the desired creaminess.
  6. Return the shrimp to the skillet and mix well. Garnish with fresh parsley before serving hot.
