Ingredients
- 25 jumbo pasta shells
- 5 oz (142 g). lobster about 3 medium tails
- 2 Tbsp (30 ml). red pepper minced
- 2 Tbsp (30 ml). onion minced
- 1 Tbsp (15 ml). butter plus 1/4 cup (60 ml) butter plus more for lobster
- 1 pkg. froz en shrimp 71/90 count, thawed
- 1 1/2 tsp (8 ml). Old Bay seasoning plus more for top
- Freshly grated ground pepper and salt
- 1/4 cup (60 ml) flour
- 4 cup (960 ml) s 2% milk
- Large pinch of nutmeg
- Few dashes hot sauce
- 1 1/2 cup (360 ml) s Parmesan cheese
- 1 large egg beaten
- 1/2 cup (120 ml) moz zarella grated
- 1/3 cup (80 ml) ricotta cheese
- Green onions for garnish, optional
Instructions
- Fill a large pot with salted water and boil the pasta shells following the instructions on the package. Drain, rinse, and set them aside.
- Using a sharp knife or strong scissors, cut through the center of the lobster tails’ shells. Carefully lift the lobster meat from the shell, removing the digestive tract. Lightly brush with 1 tablespoon of butter and arrange on a baking sheet with a rim. Broil for 5-7 minutes until the meat is tender and turns white. Let it cool, then chop into small pieces and transfer to a medium bowl.
- At the same time, melt 1 tablespoon of butter in a medium skillet and sauté the onion and red pepper for a minute. Add the shrimp and continue cooking for an additional 3-4 minutes until they are pink and fully cooked. Season with Old Bay and pepper, then set aside.
- In a small pot, melt 1/4 cup of butter and whisk in the flour. Cook the mixture for a minute while stirring. Gradually add the milk, whisking continuously. Heat the mixture until it bubbles and thickens. Season with salt, freshly ground pepper, nutmeg, and hot sauce. Add Parmesan cheese and stir until it melts. Set it aside.
- Combine the shrimp mixture with the lobster in the bowl, and gently mix in the egg, mozzarella, and ricotta cheese.
- Set your oven to 350°F and grease a 9×13-inch baking dish. Fill each pasta shell with a heaping tablespoon of the seafood filling and arrange them in the dish. Pour the cheese sauce over the filled shells. Sprinkle additional Old Bay seasoning on top.
- Bake in the oven for 30-35 minutes until the top is golden and bubbly. Garnish with green onions if you like before serving.
