Ingredients

  • 2 cups cooked lobster meat, chopped (about 450g)
  • 2 tablespoons vegetable oil (28g)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced (about 130g)
  • 1 cup celery, diced (about 120g)
  • 1 cup potatoes, diced (about 150g)
  • 1/4 cup all-purpose flour (30g)
  • 2 cups chicken broth (475ml)
  • 1 cup coconut cream (240ml)
  • 1 teaspoon salt (5g)
  • 1/2 teaspoon black pepper (1g)
  • 1 teaspoon dried thyme (1g)
  • 1/2 cup frozen peas (75g)
  • 2 tablespoons fresh parsley, chopped (8g)
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten for egg wash


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, melt the butter over medium heat.
  3. Add the diced onion and sauté until translucent, about 3 minutes.
  4. Stir in the minced garlic and cook for another 1 minute.
  5. Add the diced carrots, celery, and potatoes to the skillet.
  6. Cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes.
  7. Sprinkle the flour over the vegetables and stir to coat evenly.
  8. Gradually pour in the chicken broth, stirring constantly to avoid lumps.
  9. Bring the mixture to a simmer and cook until it thickens, about 5 minutes.
  10. Stir in the heavy cream, salt, black pepper, and dried thyme.
  11. Add the cooked lobster meat and frozen peas to the skillet.
  12. Cook for another 3-4 minutes until the mixture is heated through.
  13. Remove the skillet from heat and stir in the chopped parsley.
  14. Transfer the lobster mixture to a baking dish.
  15. Roll out the thawed puff pastry to fit the top of the baking dish.
  16. Place the puff pastry over the lobster mixture, pressing the edges to seal.
  17. Brush the beaten egg over the puff pastry for an egg wash.
  18. Cut a few small slits in the pastry to allow steam to escape.
  19. Bake in the preheated oven for 20-25 minutes until the pastry is golden brown.
