Ingredients
- 2 cups cooked lobster meat, chopped (about 450g)
- 2 tablespoons vegetable oil (28g)

- 1 cup celery, diced (about 120g)
- 1 cup potatoes, diced (about 150g)
- 1/4 cup all-purpose flour (30g)
- 2 cups chicken broth (475ml)
- 1 cup coconut cream (240ml)
- 1 teaspoon salt (5g)
- 1/2 teaspoon black pepper (1g)
- 1 teaspoon dried thyme (1g)
- 1/2 cup frozen peas (75g)
- 2 tablespoons fresh parsley, chopped (8g)
- 1 sheet puff pastry, thawed
- 1 egg, beaten for egg wash
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, melt the butter over medium heat.
- Add the diced onion and sauté until translucent, about 3 minutes.
- Stir in the minced garlic and cook for another 1 minute.
- Add the diced carrots, celery, and potatoes to the skillet.
- Cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes.
- Sprinkle the flour over the vegetables and stir to coat evenly.
- Gradually pour in the chicken broth, stirring constantly to avoid lumps.
- Bring the mixture to a simmer and cook until it thickens, about 5 minutes.
- Stir in the heavy cream, salt, black pepper, and dried thyme.
- Add the cooked lobster meat and frozen peas to the skillet.
- Cook for another 3-4 minutes until the mixture is heated through.
- Remove the skillet from heat and stir in the chopped parsley.
- Transfer the lobster mixture to a baking dish.
- Roll out the thawed puff pastry to fit the top of the baking dish.
- Place the puff pastry over the lobster mixture, pressing the edges to seal.
- Brush the beaten egg over the puff pastry for an egg wash.
