Description

Ingredients

  • – 4 salmon fillets (skin on or off)
  • – 1 tablespoon (15 ml) vegetable oil
  • – 1 teaspoon (5 ml) paprika
  • – salt and pepper to taste
  • – 20 ounces (567 g) orzo pasta
  • – 2 tablespoons (30 ml) butter
  • – 1/4 cup (60 ml) minced garlic
  • – 1/4 cup (60 ml) minced shallot
  • – 1/4 cup (60 ml) apple juice
  • – 2 1/2 cups (590 ml) beef broth (add more if needed)
  • – 1 1/2 to 2 cups (355-475 ml) fresh baby spinach
  • – 1/2 cup (120 ml) coconut milk
  • – 1/2 cup (50 g) vegan parmesan cheese
  • – 1 tablespoon (15 ml) lemon juice (from 1/2 lemon)
  • – 1 teaspoon (5 ml) Italian seasoning
  • – 1 teaspoon (5 ml) garlic powder
  • – 1 teaspoon (5 ml) red pepper flakes
  • – 1 teaspoon (5 ml) salt


Instructions

  1. Sprinkle the salmon pieces with paprika, oil, salt, and pepper.
  2. In a large frying pan, heat a splash of vegetable oil over medium-high heat. Use enough to lightly cover the pan’s surface.
  3. Once the oil is heated, place the salmon pieces in the pan and cook for around 2 minutes per side until they are browned. Take the salmon out of the pan along with any juices and put them aside.
  4. In the same pan, add butter, shallot, and garlic, cooking them for 2 to 3 minutes until they soften.
  5. Pour apple juice into the pan and allow it to reduce for 2 to 3 minutes.
  6. Mix in the orzo thoroughly.
  7. Add beef broth to the pan and bring it to a gentle boil. Incorporate coconut milk, vegan parmesan, lemon juice, Italian seasoning, garlic powder, red pepper flakes, and salt, stirring until everything is well blended. Mix in the spinach and let it simmer for 10 minutes until the orzo becomes tender, adding extra broth if needed.
  8. Return any collected salmon juices to the pan and mix. Reduce the heat to low, put the salmon back in, and cook for 6 to 8 minutes, or until the pasta is fully cooked.

Notes

  • Consider using skin-on salmon fillets for a richer flavor and added texture.
  • Adjust the amount of red pepper flakes to your preferred level of spiciness.
  • Stir the orzo occasionally while simmering to prevent sticking, adding more beef broth if needed for desired consistency.
