Description

A deliciously creamy pasta dish featuring fresh salmon, vibrant cherry tomatoes, and zesty lemon, perfect for summer evenings.


Ingredients

  • 8 oz pasta of choice
  • 2 salmon fillets
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 lemon, juiced and zested
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh basil, for garnish


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Cook salmon fillets for about 4-5 minutes on each side or until cooked through. Remove from skillet and flake into bite-sized pieces.
  3. In the same skillet, add garlic and cherry tomatoes. Sauté for about 2-3 minutes until tomatoes are wilted.
  4. Stir in the heavy cream, lemon juice, and lemon zest. Allow to simmer for 2-3 minutes.
  5. Add the cooked pasta and salmon to the skillet, tossing to combine. Season with salt and pepper to taste.
  6. Serve warm, garnished with fresh basil.

Notes

For a lighter version, consider using Greek yogurt instead of heavy cream. You can also add red pepper flakes for extra heat.
