Description
A deliciously creamy pasta dish featuring fresh salmon, vibrant cherry tomatoes, and zesty lemon, perfect for summer evenings.
Ingredients
- 8 oz pasta of choice
- 2 salmon fillets
- 2 cups cherry tomatoes, halved
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 lemon, juiced and zested
- Salt and pepper, to taste
- 2 tbsp olive oil
- Fresh basil, for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Cook salmon fillets for about 4-5 minutes on each side or until cooked through. Remove from skillet and flake into bite-sized pieces.
- In the same skillet, add garlic and cherry tomatoes. Sauté for about 2-3 minutes until tomatoes are wilted.
- Stir in the heavy cream, lemon juice, and lemon zest. Allow to simmer for 2-3 minutes.
- Add the cooked pasta and salmon to the skillet, tossing to combine. Season with salt and pepper to taste.
- Serve warm, garnished with fresh basil.
Notes
For a lighter version, consider using Greek yogurt instead of heavy cream. You can also add red pepper flakes for extra heat.
