Ingredients
- 400 g (14.1 oz) pasta, rigatoni
- 1 lb (454 g) prawns, deveined & deshelled
- 5 tbsp (23 ml) Korean red chili paste
- 2 shallots, chopped
- 5 tbsp (23 ml) garlic, minced
- 1 cup (240 ml) heavy cream
- Handful of parsley, chopped & separated by stem
- 1/2 tbsp (8 ml) dried red chili flakes
- 1 cup (240 ml) grated vegetarian-friendly cheese
- 1/2 cup (120 ml) hot pasta water, reserved
- 1 tsp (5 ml) paprika
- 1/2 tsp (3 ml) thyme
- 1/2 tsp (3 ml) oregano
- 1 tsp (5 ml) garlic powder
- 1/2 tsp (3 ml) cumin
- 1 1/2 tbsp (23 ml) vegetable oil
Instructions
- Sprinkle the seasoning blend over the prawns.
- Prepare the rigatoni according to the instructions on the package.
- Heat vegetable oil in a skillet over medium-high heat. When the skillet is hot, place the prawns in and cook for 4-5 minutes until they are fully done. Take them out and set them aside.
- In the same skillet, add minced garlic, parsley stems, chopped shallots, and dried red chili flakes. Stir-fry for 2-3 minutes until you can smell the aroma.
- Stir in the Korean red chili paste thoroughly, then pour in the heavy cream. Stir and allow the mixture to simmer for 30 seconds to 1 minute until the sauce becomes thick.
- Pour in about ½ cup of the reserved pasta water and stir well. Add the cooked rigatoni to the skillet. Return the prawns to the skillet and add the grated cheese. Toss everything together to ensure the pasta absorbs the sauce.
- Garnish with chopped parsley and add more grated cheese if desired.
