Ingredients

  • – 8 ounces (227 g) (225 grams) linguine pasta
  • – 1 tablespoon (15 ml) olive oil
  • – 1 ½ tablespoons butter, divided
  • – 1 pound (454 g) (450 grams) raw shrimp
  • – ½ teaspoon salt
  • – ¼ teaspoon ground black pepper
  • – 1 tablespoon (15 ml) Old bay seasoning, optional – or smoked paprika or cajun
  • – 1 clove garlic, minced
  • – ½ cup (120 ml) heavy cream
  • – ½ cup (40 grams) beef parmesan, grated
  • – ¼ cup chopped fresh parsley


Instructions

  1. In a medium pot, bring water to a boil and add salt. Cook the pasta as per the package directions until it has a firm bite. Once done, save 1 cup of the cooking water and drain the rest.
  2. In a frying pan over medium heat, melt 1 tablespoon of butter and pour in the olive oil. Sauté the shrimp for a short while, then sprinkle with salt, pepper, and either Old Bay Seasoning or paprika if desired.
  3. Continue sautéing the shrimp until it turns pink. If worried about overcooking, cook in portions. Transfer the shrimp to a plate and put it aside.
  4. Using the same pan, melt the remaining butter and stir in the garlic, cooking for half a minute or until aromatic. Pour in the heavy cream, and use a spatula to scrape up any browned bits from the pan.
  5. Incorporate the parmesan and let it melt, then thin the sauce with the reserved pasta water and let it simmer briefly. Check the seasoning to see if additional salt and pepper are needed.
  6. Combine the pasta with the sauce, ensuring it is fully coated. Reintroduce the shrimp to the pan to gently warm it, then sprinkle with chopped parsley and serve.
