A comforting dish of creamy garlic shrimp served over buttery mashed potatoes, perfect for any occasion.
Ingredients
- 1 lb fresh or frozen shrimp, peeled and deveined
- 2 lbs potatoes (russet or Yukon Gold)
- 4 tbsp butter
- 1/2 cup heavy cream
- 4 cloves garlic, minced
- 1 tsp paprika
- 1/2 cup Parmesan cheese, grated
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Boil the potatoes in salted water until tender.
- Drain and mash the potatoes with butter, adding salt and pepper.
- Melt butter in a skillet over medium heat.
- Add the shrimp and season with paprika, salt, and pepper. Cook until pink and opaque.
- Remove shrimp and set aside. Add fresh garlic to the skillet and sauté until fragrant.
- Incorporate heavy cream and Parmesan cheese, cooking until slightly thickened.
- Return shrimp to the skillet, coating them in the sauce.
- Serve the shrimp over mashed potatoes and sprinkle with chopped parsley.
Notes
For extra flavor, marinate the shrimp in garlic, paprika, and a dash of salt for 30 minutes before cooking.
