Ingredients
- 8 oz pasta of choice
- 8 oz salmon fillets
- 4 oz feta cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup spinach
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Add salmon fillets and cook until flaky, about 4-5 minutes on each side. Remove and flake the salmon.
- In the same skillet, add cherry tomatoes and spinach, cooking until spinach wilts.
- Lower the heat and add feta cheese, stirring until it melts and combines with the vegetables.
- Toss in the cooked pasta and flaked salmon, mixing gently to combine.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh basil.
