Ingredients
- 8 ounces bow tie pasta
- ½ cup salted butter
- ⅓ cup all-purpose flour
- 1 bunch green onions (thinly sliced)
- 1 small onion (fine diced)
- 4 garlic cloves (minced)
- 1 green bell pepper (fine diced)
- 2 celery ribs (fine diced)
- 1 teaspoon Better than Bouillon Chicken Base
- 1 pint heavy whipping cream
- 2 pounds frozen crawfish tails (thawed and drained)
- 10 ounces Rotel diced tomatoes with green chilies (drained)
- 1 tablespoon Slap Ya Mama Cajun seasoning
- 1 tablespoon fresh parsley (chopped)
- ¼ teaspoon black pepper (to taste)
- ⅛ teaspoon kosher salt (to taste)
- 1 tablespoon Louisiana Hot sauce (to taste)
- Shredded Parmesan cheese (for serving)
- Additional chopped fresh parsley (for garnish)
Instructions
- Start by preparing the bow tie pasta according to the package instructions. Cook until al dente, drain, and set aside.
- Next, make the roux. In a saucepan over medium heat, melt ½ cup of salted butter. Gradually whisk in ⅓ cup of all-purpose flour. Continue stirring until you achieve a light golden color, around 3-5 minutes.
- Add in your ingredients: throw in the finely diced small onion, along with the minced garlic, green bell pepper, and celery ribs. Sauté these colorful veggies until they soften, releasing their flavors.
- Sprinkle 1 teaspoon of Better than Bouillon Chicken Base and proceed to pour in the 1 pint of heavy whipping cream. As the cream melds with the roux, see it transform into a creamy base.
- Stir in your thawed crawfish tails and drained Rotel diced tomatoes, followed by 1 tablespoon of Slap Ya Mama Cajun seasoning, ¼ teaspoon black pepper, and ⅛ teaspoon kosher salt.
- Cook everything together for about 5-7 minutes or until everything is heated through. Adjust the flavor with Louisiana Hot sauce, if desired.
- Finally, combine the cooked pasta with the sauce, making sure it gets coated well. Serve in bowls, topped with shredded Parmesan cheese and fresh parsley for a burst of brightness.

For an extra kick, consider adding a tablespoon of lemon juice just before serving. This brightens the creaminess.
