  • 2 tablespoons (28 g) unsalted butter
  • 1 tablespoon (15 ml) olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup (30 g) all-purpose flour
  • 4 cups (960 ml) seafood or vegetable broth
  • 1 pound (450 g) imitation crab meat
  • 1 cup (240 ml) coconut milk
  • 1/2 teaspoon (3 ml) salt
  • 1/4 teaspoon (1 ml) black pepper
  • 1/4 teaspoon (1 ml) cayenne pepper
  • 2 tablespoons (8 g) fresh dill, chopped
  • 1 tablespoon (15 ml) lemon juice

Instructions

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add the finely chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute, until fragrant.
  4. Sprinkle the all-purpose flour over the onion and garlic, stirring constantly for 2 minutes.
  5. Gradually whisk in the seafood or vegetable broth, ensuring no lumps form.
  6. Bring the mixture to a simmer and cook for 10 minutes, allowing it to thicken.
  7. Add the lump crab meat to the pot and gently stir to combine.
  8. Pour in the whole milk and heavy cream, stirring continuously.
  9. Season the bisque with salt, black pepper, and cayenne pepper.
  10. Allow the bisque to simmer for another 5 minutes, stirring occasionally.
  11. Stir in the fresh dill and lemon juice, mixing well.
  12. Taste and adjust seasoning as needed.
  13. Serve the bisque hot, garnished with additional fresh dill if desired.

Notes

  • Use top-quality seafood or vegetable broth for maximum flavor in the bisque.
  • Ensure that the imitation crab meat is well-drained to avoid excess liquid.
  • Adjust the cayenne pepper quantity to your preferred level of spiciness.
