Ingredients

  • 4 tablespoons Butter (or olive oil for a lighter option)
  • 1 cup Celery (Chopped, fresh or frozen cubes work)
  • 1 cup Green Onions (Sliced; leeks are a great alternative)
  • 1/4 cup Flour (Consider gluten-free flour for a gluten-free option)
  • 1 cup Heavy Whipping Cream (Substitute with whole milk for lighter texture)
  • 2 cups Whole Milk (Can be swapped with low-fat milk)
  • 2 tablespoons Tomato Paste (Canned crushed tomatoes can be used)
  • 1 tablespoon Old Bay Seasoning (Cajun or seafood boil seasoning are alternatives)
  • Salt, to taste
  • Pepper, to taste
  • 1 cup Cooked Shrimp (Fresh is ideal; cooked frozen works)
  • 1 cup Crab Meat (Imitation crab is a budget-friendly substitute)


Instructions

  1. Melt the butter in a large pot over medium heat. If using olive oil, allow it to warm up before adding the veggies.
  2. Add the chopped celery and sliced green onions, sautéing for 5–7 minutes until they soften.
  3. Sprinkle the flour over the sautéed vegetables. Stir well to combine and cook for an additional 2 minutes.
  4. Pour in the heavy cream and whole milk slowly, stirring continuously to avoid lumps. Bring the mixture to a gentle simmer.
  5. Incorporate the tomato paste and Old Bay seasoning. Mix well and season with salt and pepper to taste.
  6. Fold in the cooked shrimp and crab meat. Let the bisque simmer for 10 minutes, allowing the flavors to meld.
  7. Adjust seasoning if needed, adding more Old Bay or salt to suit your palate. Divide the bisque into bowls and enjoy!

Notes

For a personalized twist, consider adding scallops or mussels, or a splash of lemon juice for brightness.
