Ingredients
- 4 cod fillets
- 4 medium potatoes
- 1 cup heavy cream
- 2 tablespoons fresh rosemary, chopped
- 4 tablespoons butter
- Salt to taste
- Pepper to taste
- Bread or green salad (for serving)
Instructions
- Preheat the oven to 375°F (190°C).
- Boil the potatoes until tender, then drain and mash them with butter, salt, and pepper.
- Melt some butter in a saucepan, then add the cream and chopped rosemary. Simmer until slightly thickened.
- Place cod fillets in a baking dish, pour the rosemary cream sauce over them, and bake for 20 minutes or until the cod is flaky.
- Serve the cod alongside the mashed potatoes and bread or salad.
Notes
Use fresh rosemary for the best flavor. Store leftovers in airtight containers in the fridge for up to three days.
