A delicious and easy creamy Cajun shrimp pasta that combines the richness of cream and the bold flavors of Cajun spices for a delightful meal.
Ingredients
- 8 oz fettuccine or pasta of your choice
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley for garnish
Instructions
- Boil salted water in a large pot. Once boiling, add the pasta. Cook according to the package instructions until al dente. Drain and set aside.
- In a bowl, toss the peeled and deveined shrimp with Cajun seasoning, ensuring they are fully coated.
- Heat the olive oil in a large skillet over medium heat.
- Add the seasoned shrimp to the skillet. Sauté for about 2-3 minutes on each side until they turn pink and opaque. Once cooked, remove the shrimp from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and chicken broth, stirring well to combine.
- Add diced tomatoes and bring the mixture to a simmer.
- Stir in the Parmesan cheese, paprika, salt, and black pepper. Allow the sauce to simmer for about 5 minutes until it thickens slightly.
- Add the cooked pasta and shrimp to the sauce, tossing everything together to coat well in the creamy mixture.
- Serve the pasta hot, garnished with fresh parsley for a pop of color.
Notes
For a lighter version, swap heavy cream for half-and-half or evaporated milk. Add veggies like bell peppers or zucchini for extra nutrition.
