Description

A delicious and easy creamy Cajun shrimp pasta that combines the richness of cream and the bold flavors of Cajun spices for a delightful meal.


Ingredients

  • 8 oz fettuccine or pasta of your choice
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley for garnish


Instructions

  1. Boil salted water in a large pot. Once boiling, add the pasta. Cook according to the package instructions until al dente. Drain and set aside.
  2. In a bowl, toss the peeled and deveined shrimp with Cajun seasoning, ensuring they are fully coated.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the seasoned shrimp to the skillet. Sauté for about 2-3 minutes on each side until they turn pink and opaque. Once cooked, remove the shrimp from the skillet and set aside.
  5. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  6. Pour in the heavy cream and chicken broth, stirring well to combine.
  7. Add diced tomatoes and bring the mixture to a simmer.
  8. Stir in the Parmesan cheese, paprika, salt, and black pepper. Allow the sauce to simmer for about 5 minutes until it thickens slightly.
  9. Add the cooked pasta and shrimp to the sauce, tossing everything together to coat well in the creamy mixture.
  10. Serve the pasta hot, garnished with fresh parsley for a pop of color.

Notes

For a lighter version, swap heavy cream for half-and-half or evaporated milk. Add veggies like bell peppers or zucchini for extra nutrition.
